Recipe: Fudgie Earthquake Tarts

FORT WORTH (CBS 11 / TXA 21) ― The following recipe for Fudgie Earthquake Tarts won a first place prize at the 2009 State Fair of Texas.

Crust Ingredients:

-- 1/2 cup cream cheese, room temperature
-- 1/2 cup butter, softened
-- 1/4 cup sugar
-- 1/2 tablespoon grated orange peel
-- 1-1/4 cups flour

Filling Ingredients:

-- 1/2 cup Ghirardelli Semi-Sweet Chocolate Chips, melted
-- 4 ounces Ghirardelli White Chocolate Baking Bar, melted
-- 1 stick butter, melted
-- 1 cup sugar
-- 2 eggs, beaten

For The Crust:

Place cream cheese, butter, sugar and orange peel in a medium bowl and beat until well mixed.

Add flour and stir until mixed.

Place cupcake liners in a 12-cup muffin pan. Divide the dough evenly into all the cups and press the dough so it covers the bottom and sides of the papers.

For The Filling:

Place melted Ghirardelli semi-sweet chocolate chips and Ghirardelli white chocolate into a medium size mixing bowl. Add melted butter and sugar and beat thoroughly with wire whisk until well mixed.

Add the eggs and beat with the wire whisk until mixture is smooth.

Pour evenly into the crusts.

Bake in a 375 degree preheated oven for 25 to 30 minutes until the crusts are golden brown and the filling is set. Top will be crispy to the touch.

Delicious served warm or cold!
